Elevate your holiday feast this year with the magic of the BBQ. This mouthwatering recipe is guaranteed to bring joy to your table!

Christmas Turkey with Lemon, Parsley, and Garlic.

No Christmas dinner is complete without a showstopping turkey at the center of the table. Free up your oven and take your holiday feast to the next level by cooking your turkey on the barbecue. Here’s how to do it step by step:

Ingredients

  • 1 free-range turkey, about 5-5.5 kg.
  • 4 bay leaves.
  • Olive oil.
  • 8 slices of smoked streaky bacon.
  • 2 onions, peeled and roughly sliced.
  • 4 celery sticks, roughly chopped.
  • 2 carrots, cut lengthwise.
  • 1 lemon, sliced.
  • Parsley and thyme.

For the flavoured butter: 

  • 375g of butter.
  • 1 tbsp of olive oil.
  • 2 lemons, juice then zest finely.
  • 3 garlic cloves, peeled and crushed.
  • small bunch of flat leaf parsley, leaves only, chopped.

Instructions

  1. Prepare the BBQ: Set your barbecue up for an indirect roasting method at 180°C.
  1. Make the butter mix: Combine butter, salt, pepper, olive oil, lemon zest and juice, garlic, and parsley in a bowl. Mix well.
  1. Prep the turkey:
  • Gently loosen the skin over the turkey breast and legs without tearing it.
  • Spread half the butter mix under the skin, massaging it evenly across the breast and legs.
  • Tuck bay leaves under the skin of the breast.
  1. Assemble the Roasting Tray: Arrange vegetables, sliced lemon, parsley, and thyme in a roasting tin. Place the turkey breast-side-up on top. Spread the remaining butter over the skin, season well, and drizzle with olive oil.
  1. Roast the Turkey:
  • Place the turkey on the barbecue and roast for 10–15 minutes.
  • Baste, then lay bacon over the breast. Baste again, close the lid, and continue cooking for 2 3/4 hours (or 30 minutes per kg), basting occasionally.
  • Ensure the turkey’s juices run clear or that its internal temperature reaches 75°C using a meat thermometer.
  1. Rest and Serve: Let the turkey rest for at least 45 minutes before carving. Remove the bay leaves. Use the roasted vegetables and pan juices to prepare a delicious gravy.
