Grilled Corn Two Ways

Grilled Corn

One of the best things about summer in Ontario is the fresh produce, and there are few foods better than fresh corn on the cob! There are endless ways you can prepare your corn on the cob, but these recipes are just a few of the ways you can take your delicious grilled corn to the next level.

Ingredients

  • 4 ears of corn shucked (per recipe)

Grilled Mexican Street Corn

  • 1 tbsp vegetable oil
  • Sea salt (to taste)
  • Ground black pepper (to taste)
  • ½ cup of crumbled cotija cheese
  • ¼ cup of mayo
  • ¼ cup of sour cream
  • ¼ cup of diced, fresh cilantro
  • 1 tsp lime zest
  • ½ tsp ancho chilli powder
  • 4 lime wedges (for serving)

Smoked Paprika, Pimento, and Chive Butter

  • ¾ of a stick of unsalted butter at room temperature
  • 2 tbsp of fresh chives, chopped
  • 2 tbsp of drained pimentos, minced
  • 2 tbsp of smoked paprika
  • 1 clove of garlic, minced
  • Sea Salt (to taste)
  • Tricolor or black pepper (to taste)

Grilling Directions for Grilled Mexican Street Corn

  1. Mix a ¼ cup of the cotija cheese, mayo, sour cream, cilantro, lime zest, and ancho chile powder in a small bowl and set aside in the refrigerator
  2. Toss the uncooked corn in oil and lightly season with salt and pepper.
  3. Preheat your grill to medium-high heat.
  4. Place the seasoned corn on the grill and rotate each cob every two to three minutes for 8 to 10 minutes or until cooked.
  5. Remove the corn from the grill, and while it is still hot brush it with a cheese mixture and sprinkle the coated cobs with the remaining ¼ cup of cheese.
  6. Serve each cob with a lime wedge.

Grilling Directions for Smoked Paprika, Pimento, and Chive Butter Corn

  1. In a small bowl, mix unsalted butter, chives, pimento, paprika, garlic, sea salt, and black pepper.
  2. Lightly brush each ear of corn with 1 to 2 teaspoons of the mixture.
  3. Preheat your grill to medium-high heat.
  4. Place the buttered cobs of corn on the grill and rotate every 2 to 3 minutes for roughly 8 to 10 minutes or until cooked.
  5. Remove the cobs from the grill and spread with the remaining butter mixture before serving.
