Habanero BBQ Shrimp

Grilling shrimp during the warm weather is a great way to use fresh seafood, fresh produce, and delicious spices to create a tropical and beachy meal for friends and family. If you’re thinking of grilling up some shrimp to celebrate the warm weather and the start of grilling season, why not spice up a traditional grilling classic by following this delicious habanero BBQ shrimp recipe!

Equipment

  • Small bowl
  • Whisk
  • Plastic bag or container for marinating
  • BBQ tongs
  • Basting brush
  • Bamboo skewers

Ingredients

  • Vegetable oil
  • 1 ½ cup of preserved apricot
  • 2 lbs of extra-large shrimp, peeled and deveined
  • 2 limes worth of lime juice
  • 2 teaspoons of finely grated ginger
  • 4 small finely grated cloves of garlic
  • 3 tablespoons of dark soya sauce
  • 2 habanero peppers deseeded and finely chopped
  • Salt and pepper to taste

Preparation Instructions

  1. Mix together apricot, lime juice, ginger, garlic, soya sauce, habanero peppers, and salt and pepper in a small bowl.
  2. Pour half of the mixture into a large plastic bag or plastic container with 2 lbs of shrimp. Seal and let marinate in the fridge for between 10 minutes and 1 hour.
  3. Brush grill grates with vegetable oil.
  4. Soak bamboo skewers in water.
  5. Place 4 to 5 of the marinated shrimp on skewers.

Grilling Instructions

  1. Preheat your grill to high.
  2. Cook skewers with shrimp until seared on both sides (about 3-5 minutes).
  3. Serve with the other half of the remaining sauce to dip.
