Mom Deserves the Best: Mother’s Day Brunch Fit for a Queen

This Mother’s Day, spoil Mom with a brunch that’s as beautiful as she is! This recipe combines a light and fluffy Dutch baby pancake with a stunning charcuterie spread, creating a feast for the senses.

Ingredients:

For the Dutch Baby:

  • 3 large eggs, at room temperature
  • ¾ cup whole milk, whisked smooth
  • ¾ cup all-purpose flour, sifted
  • 2 tbsp. granulated sugar
  • 2 tsp. pure vanilla extract
  • Pinch of ground cinnamon
  • Pinch of sea salt
  • 4 tbsp. unsalted butter, cut into cubes – some for sizzling, some for melting

For the Mother’s Day Charcuterie:

  • A selection of Mom’s favourite cheeses – think creamy brie, sharp cheddar, or tangy goat cheese
  • Fresh berries and sliced fruit, a vibrant burst of colour and vitamins
  • Crispy bacon strips and savory breakfast sausage links, cooked to perfection
  • Golden hash browns, crispy on the outside and fluffy within (optional)
  • Deviled eggs, a classic with a playful twist (optional)
  • Powdered sugar and maple syrup, for a touch of sweet indulgence

Instructions:

1. While Mom relaxes (she deserves it!), prepare the charcuterie spread. Cook the bacon and sausage, slice the fruit, and arrange the cheeses on a platter. Preheat your oven to 425°F (220°C). Preheat a cast iron skillet in the oven as well. For a fun twist, heat up the grill and bake your Mother’s Day brunch on the grill.

2. Whisk up the batter. In a blender, combine the eggs, milk, flour, sugar, vanilla extract, cinnamon, and salt. Blend until smooth and creamy, about 15-20 seconds.

3. Carefully remove the hot skillet. Add 2 tablespoons of butter and let it melt and sizzle.

4. Pour the batter into the preheated skillet. Return the pan to the oven or grill and bake for 20-25 minutes, or until puffed and golden brown.

5. While the Dutch baby bakes, assemble the charcuterie platter on a beautiful serving board.

6. Once golden brown, remove the Dutch baby and immediately dust with powdered sugar. Drizzle with maple syrup and arrange your favourite charcuterie selections around it.

7. Don’t forget to clean up the mess! That’s not something Mom should be doing on her special day.

Make it a Special Mother’s Day

For a truly decadent experience, add a dollop of whipped cream or mascarpone cheese to the Dutch baby before serving. Keep in mind, this recipe can be easily doubled to serve a larger crowd.
